Summer Salads: Spinach and Strawberry Delight

During the hot humid days of a South Texas Summer I crave fruit and salads more than anything else. Mostly because it so hot its the only thing that sounds appetizing and not heavy enough to weight me further into the liquid air of humidity. One of my favorites is a Spinach and Strawberry salad. Its light and full of flavor. Filling and colorful this salad has a sweet and savory taste.

Spinach and Strawberry Summer Salad

2 handfuls of fresh spinach
2-3 strawberries
2-3 mushrooms
2 tablespoons of balsamic vinegar
pinch of sliced almonds (optional)

Place one handful of the spinach in a bowl, layer with slices of 1 mushroom and 1 strawberry.



Cover with rest of spinach and slices of mushrooms, strawberries, and almonds (optional).


Drizzle with the balsamic vinegar and enjoy!
