Easy Baked Chicken

So I used to work at this little family diner when I was in high school and college. They had this amazing baked fish recipe, that I loved! The fish was flavorful and tender and would fall apart as you ate it. I would always order it as my employee meal before work, and the best part it was super healthy and delicious at the same time!

Well, today I'm going to do a twist on this beloved recipes with chicken instead. Honestly, Darling Hubby used the idea first so kudos to him for being smart! I'll show you how I did it but, you can pretty much customize this for however you like to flavor your chicken, fish or other meat.
First, preheat the oven to 475. Then we are going to take foil about a foot by foot square.

Place the meat in the center of the foil and season to taste. Here I used Paprika on my chicken breast because I've been on a Paprika kick lately.

Fold the foil in half over the chicken and crimp down to make a pocket. The fold over the sides, till the meat, is completely sealed inside. This gives you a steam area which is really what you are doing to the meat.

Place on a baking sheet, and cook for 10-15 minutes depending on how thick your cut of meat is. When you see the foil start to puff you know it is really starting to cook.

Take it out of the oven and cut foil open with scissors. Plate and enjoy! I had mine I with some of the corn I had canned last year. Still fresh and delicious!
